Upcoming January 15th event pairs a four-course dinner with Dom Pérignon at Council Oak Steaks & Seafood and a four-course Super Tuscan wine dinner at Cipresso on January 30th

Seminole Hard Rock Hotel & Casino Tampa has officially rolled out their 2020 wine and spirits dinner series line-up with expanded offerings throughout their fine dining establishments.  The series will kick-off on Wednesday, Jan. 15 at Council Oak Steaks & Seafood, specializing in prime steaks, fresh seafood, and featuring a Wine Spectator-recognized wine list.  Synonymous for their annually celebrated wine dinners, Council Oak will collaborate with Dom Pérignon, the vintage prestige champagne produced by Moët and Chandon.  The 36-seat limited engagement will begin at 6 p.m. Tickets for the event are $250 per person, inclusive of tax and gratuity.

Creative Culinary Director Frank Anderson, chef de cuisine Luis Rosales, and executive butcher Walter M. Apfelbaum have developed a menu that both highlights the restaurant’s focus on fine meats and seafood, and pairs beautifully with Dom Pérignon. 

The first course is American Caviar served with traditional accoutrements and Gaufrette potato.  For the second course, guests will dive into Skuna Bay Salmon Tataki, imbued with bright flavors of yuzu vinaigrette, orange, almond, mint, and chili oil. As a palate cleanser, the Meyer Lemon Granita with shiso leaf livens and refreshes in preparation for a hearty third course, Turf and Surf of Wagyu strip loin and Maine lobster tail with twice baked potato, shaved asparagus and Beurre Blanc.  To end the meal on a sweeter note, a Sticky Toffee Pudding with whipped crème fraiche and Heath Bar crumble will be served.

On Thursday, Jan. 30 at 6 p.m., Cipresso, a contemporary Italian-American trattoria, will welcome patrons to experience their four-course Super Tuscan wine dinner.  Tickets for the event are $125 per person, inclusive of tax and gratuity. Creative Culinary Director Frank Anderson and chef de cuisine Joseph Caratozzolo have curated a menu that complements the concept’s traditional Italian-American favorites along with thoughtfully paired fine wines from Tuscany. 

The intimate 16-seat dinner will begin with Sicilian Tuna Tartare garnished with avocado, balsamic, pistachio and chili.  The second course will feature Ravioli al’ Uovo filled with house made ricotta and served with Jidori yolk, sage brown butter, and delicata squash.  For the Intermezzo guests will enjoy Chinoto Granita with orange zest.  The main course of Colorado Lamb Chops with braised escarole, butter beans, and mint salsa verde will not disappoint.  The dine will end with La Famiglia, a flight of three house made gelatos accompanied by a tasting of Galliano.
